AbstractThe author reviews the history of barbecue generally, and then specifically in Kansas City, including a discussion of race relations during the 1920s and '30s. Henry Perry was the first recorded barbecuer in Kansas City. Charlie Bryant inherited Perry's business and then sold it to his brother Arthur when he retired. A bibliography is included.
